La Liegoise, digue de Mer, Wimereux. Tel: 0033 321 32 41 01.

Atlantic Hotel Restaurant. In my opinion, the best restaurant in the Pas de Calais. Originally in Boulogne, La Liegoise is based in the Hotel Atlantic, on the seafront, in Wimereux some 7kms outside Boulogne. Car park at the rear. www.atlantic-delpierre.com

What makes it special? First thing that strikes you is the superb view across the sea from the first floor restaurant. Secondly, the decor of the room and the professionalism of the staff. And then - most important - is the food and wine. Specialising in fish, the quality and presentation of the food (which merits a toque from the Gault-Millau guide) is exceptional. Set menus are available (highly recommended) and more. Dishes may include fillets of sole stuffed with lobster and served with fresh pasta or cod on the bone with roast onions in a wine vinegar sauce. Canapés are delicious, as are the deserts. Cheeses are from Philip Olivier, best fromagier in the north of France. Well-chosen wine list at reasonable prices. Don't, however, come here if you are in a hurry - 2 hours, at least, is needed to do justice to the cooking. Also, if you can, reserve in advance to get a table by the picture windows.

Situated on the old Calais/Boulogne road, just off the autoroute and about 16 kms from Boulogne. Don't be deterred by the stark grey exterior of this old coaching inn. Inside it has been attractively refurbished and has two dining rooms. Limited parking in the courtyard but plenty of on-street parking.

Service is reasonably friendly and quite fast - they are clearly used to travellers with ferry deadlines to meet. The food is excellent (a toque from Gault-Millau) and the wine list is good with some outstanding examples at fair prices (try the Gigondas 1998). Meat, poultry and fish are equally good and their foie gras is practically an erotic experience (did I hear trumpets?).

Not quite the sophistication of La Liegoise, but I've been there many times and it's well worth trying.
