Be Careful! There is unfortunately a tendancy for some traders to rip tourists off, especially the elderly. Buy a piece of cheese for example, and find yourself charged ten times the normal price. Here's how it works; They will engage in pleasant chat, whilst giving you more than you actually asked for. A free gift will be thrown in before it is weighed. These are usually goats cheese (cheap). The rate per 100 grams may well be displayed but is often shockingly high - 10 x that in the supermarkets for example. They will helpfully offer to accept less when you say "is that 5 or 50 euros?". Stand your ground. Even if a trader has cut the cheese or taken some money, refuse to complete the sale and threaten to call the police. In my case, it was my 93 year old mother in law being taken for a ride before I turned up. (Romans)

Markets in France are well worth a visit. They often have a good range of fresh vegetables (often organic) and locally produced goods unavailable elsewhere.
There are also many second hand markets, boot sales etc. throughout the year, but especially towards the end of the year before Xmas.
Calais has two lovely markets selling flowers, plenty of fruit and vegetables, as well as meats and farm produce.

Calais has two markets selling fresh produce. Both finish about midday so make it your first stop if on a day trip. In Place d'Armes (centre), there is a market on Wednesday & Saturday mornings. Calais - An annual flea market takes place on the first weekend in August (Sunday and Monday). Lille - On the first weekend of September, the town becomes a huge flea market.
